Commercial Fridge Cooling Types Explained.

Every commercial fridge and freezer uses one of three main cooling methods. Manufacturers sometimes describe them differently, so the wording can vary between spec sheets. Understanding the differences will help you choose the right refrigeration for your kitchen.

The evaporator creates the cold inside the cabinet. Manufacturers usually hide this refrigerant coil behind an internal panel. As refrigerant passes through the coil, it absorbs heat from the air inside the fridge or freezer. Each cooling system simply moves that cold air around the cabinet in a different way.

Static Cooling

Static cooling relies on the natural movement of cold air. As the air cools, it sinks through the cabinet without fans constantly circulating it.

This design keeps running costs low and operates quietly. However, temperatures can vary slightly between the top and bottom of the cabinet.

Manufacturers commonly use static cooling in chest freezers, many wine coolers and some bottle coolers where products don’t need to recover temperature quickly after the door opens.

Some cabinets described as static still contain a small fan. That doesn’t change the cooling method. The term static describes how the cabinet cools overall rather than whether it contains a fan.

Fan-Assisted Cooling

Fan-assisted cooling uses one or more fans to circulate cold air more evenly around the cabinet. This creates a more consistent temperature than static cooling while using gentler airflow than a fully ventilated system.

It suits single-door fridges and freezers that see regular daily use in cafés, pubs, restaurants and commercial kitchens.

Ventilated Cooling (Dynamic Cooling)

Ventilated cooling uses fans to distribute cold air continuously throughout the cabinet. This keeps temperatures more consistent from top to bottom and helps the cabinet recover quickly after someone opens the door.

Manufacturers often use ventilated cooling in busy kitchens, refrigerated prep counters and larger multi-door cabinets where staff access the contents throughout the day.

Will Ventilated Cooling Dry Food Out?

It can.

Continuous airflow removes moisture more quickly than static cooling. If you leave fresh food uncovered, it can dry out sooner.

Store fresh ingredients in covered containers or suitable food-safe packaging to prevent moisture loss. Packaged foods and bottled drinks are rarely affected.

Does the Cooling Type Affect Defrosting?

Often, but not always.

Static cabinets usually require manual defrost. You’ll need to switch the unit off occasionally and allow any ice build-up to melt.

Manufacturers fit many fan-assisted models with automatic defrost, although some still require manual defrost.

Ventilated cabinets also commonly include automatic defrost systems. These remove ice build-up without interrupting normal operation.

Always check the product page or manufacturer’s specification before you buy. The cooling method does not automatically tell you how the cabinet defrosts.

Which Cooling Type Is Best?

There isn’t a single best option. The right choice depends on how you use the cabinet.

  • Static cooling works well for chest freezers, wine coolers and applications where doors stay closed for longer periods.
  • Fan-assisted cooling offers an excellent balance of even temperatures and energy efficiency for everyday commercial use.
  • Ventilated cooling suits busy kitchens where staff open doors frequently and the cabinet needs to recover temperature quickly.
