Kitting out a butchery counter from scratch is a big spend. But not every item needs to be new to do the job properly. Below, we’ve put together nine pieces of equipment covering everything from the meat slicer to the display fridge — some new, some reconditioned, some graded. Here’s what we’d recommend for each, and why.
Cutting and prep — where the counter earns its money
Your slicer is the workhorse of the counter. Choose it sensibly, not simply cheaply. The Infernus 300mm Meat Slicer brings a chrome-plated blade and a smooth, quiet induction motor to the job. Front of house — making the display work
Once the meat is prepped, it needs somewhere to sell it. A butcher originally commissioned the Mafirol Amalia curved glass display as part of a larger counter. Hygiene that can’t be an afterthought
Some kit is always worth buying new. A knife steriliser is one of them. The Sammic EC-30 uses a germicidal UV lamp to sterilise 25 to 30 knives in under half an hour, keeping your cutting tools genuinely hygienic between uses rather than just rinsed.
Washing up needs the same level of seriousness. A counter handling trays, boards and mincer parts all day needs proper throughput, not a light-use domestic-style machine. Packing and cold storage

Finally, keep meat properly chilled with the graded Blizzard BR1SSCR upright refrigerator. At 650 litres with four adjustable shelves and a self-closing double-glazed door, this Grade A unit is most likely an unused return or a box damaged in transit. You’d struggle to tell it apart from new. The price, though, tells a different story.
Building the counter that’s right for you
Kitting out a butchery counter doesn’t have to mean choosing between new and secondhand across the board. Buy new where hygiene and daily reliability matter most.
