All-Day Dining Is Booming — Could Your Kitchen Keep Up?

Breakfast at 7am. Cocktails at midnight. Same venue, same kitchen. All-day dining isn’t a niche experiment anymore — it’s one of the defining shifts in UK hospitality this year, and the data backs it up.

It’s Not Just a London Phenomenon

This shift is playing out well beyond the capital. Closer to home for us, Norwich’s own Iron House runs as an all-day brasserie in a beautifully renovated historic building, moving from breakfast and brunch through to evening dining without closing the doors in between. The same pattern is showing up further afield too — the Lounge group, with over 250 sites across the UK, is bringing its all-day café-pub-restaurant hybrid format to new towns this year, while Mollie’s Motel & Diner, an all-day concept already established in Bristol and Oxfordshire, has just opened its first Manchester city-centre site, serving everything from morning pancakes to late-night shakes under one roof.

What the Numbers Show

Lumina Intelligence’s own analysis of the pub sector backs this up directly: operators are increasingly reshaping their food ranges toward richer mains, premium sides and desserts specifically to support all-day and treat-led visits, including afternoon trade beyond the traditional lunch-and-dinner split. Mintel’s 2026 UK Eating Out review backs this up too. The biggest growth opportunity now comes from younger diners who eat out at all different times of day, trying formats like kiosks and food halls — and turning up for breakfast more than they used to.

Put simply — it’s not just about what’s on the menu. It’s about how many hours a day you’re able to serve it.

The Reality Behind the Trend

Stretching one venue across breakfast, lunch and dinner takes more than simply extending the hours. Kitchens have to keep performing consistently across the whole day, without a quiet window to fall back on between services. That puts more pressure on the equipment itself — it needs to earn its place from morning through to night, not just one service.

That’s the real difference between a kitchen built for all-day dining and one that isn’t: equipment that works just as well at 8am as it does at 8pm.

What This Means for Your Equipment

A few practical implications follow from that:

Cooking equipment needs to perform across the day. A griddle turning out bacon and eggs at breakfast should be just as capable of burgers and paninis by lunch, and steaks or seared fish by evening — that’s the kind of versatility worth prioritising over a single-purpose unit, especially in a kitchen with limited space to swap equipment in and out through the day.

Holding and display equipment has to work continuously. A display cabinet stocked with pastries for the breakfast rush might be filled with sandwiches by lunch and desserts by evening — so displays and hot cupboards are effectively on duty all day rather than switched on for one service, which is worth factoring into how much capacity and reliability you’re buying.

Coffee and drinks equipment matters more than ever. With all-day formats putting coffee on the menu from opening to close rather than just the morning rush, a bean-to-cup machine or espresso setup needs to handle a proper breakfast rush and keep performing right through to evening trade.

Reliability matters. A single-service restaurant has natural quiet periods between sittings. An all-day venue often doesn’t — so it’s worth choosing equipment built for continuous, heavy-duty use rather than something only ever specified for one service a day.

Not every venue needs to go all-day, and stretching into a format your kitchen isn’t built for can cause more problems than it solves.
