Wet or Dry?
Choosing between a wet and dry heat bain marie boils down to how you want your food heated. Wet bain maries use a water bath, creating a gentle, moist heat that’s perfect for preventing items like stews, soups, and sauces from drying out. Dry heat bain maries use heating elements directly beneath the food pan, perfect for pre-cooked, moist foods like sauces or creamy dishes, while also crisping up roasted vegetables or keeping fried items hot and crispy – ideal for foods served quickly.
