Roller Grill FM 4 Double Level Smoker Unit, 710mm (w) is a professional cold smoker perfect for infusing flavour into various foods. It excels at cold smoking with beech sawdust, ideal for meats like duck breast and filet mignon, cold cuts like ham, bacon, and sausage, fish like trout, salmon, and herring, and even crustaceans like lobsters.
Professional cold smoking, a method now much favoured by chefs, involves three distinct stages: salting, drying, and finally, smoking. This last step is carried out cold to remove the free water of the product, without drying or crusting the product. Cold smoking is primarily used for its ability to add a unique and complex smoky flavour to food. It doesn’t cook the food, so it allows delicate flavours and textures to remain intact while adding a smoky depth.
The FM4 is a versatile electric smoker equipped with a heating element and timer. This element allows for automatic ignition and sawdust burning, streamlining the smoking process. It also features a cooking grid, and comes with a 100% natural beech sawdust refill – the key ingredient for achieving that distinctive smoked flavour in your final product.
