BTU Explained: A Quick FAQ for Commercial Kitchen Equipment.
BTU shows up on every gas fryer, range and oven spec sheet, but it’s rarely explained properly. Here’s what it actually means and how to use it when comparing equipment.
What does BTU actually mean?
BTU stands for British Thermal Unit — a measure of heat output. On a spec sheet, it’s usually written as BTU/hr, which tells you how much heat a burner or oven can produce in an hour. The higher the number, the more heat the appliance can put out, and the faster it heats up and recovers between orders.
Does a higher rating mean a better appliance?
Not automatically. A higher rating just means faster heat-up and recovery — whether that’s useful depends on the job and how many people you’re serving, not on the number itself. A compact griddle running around 20,000 BTU suits steady, moderate-volume grilling. A busier site running continuous breakfast or burger service needs something closer to 90,000 BTU to keep up. Neither is “better” — they’re built for different volumes.
How much do I actually need?
It scales with volume more than with menu complexity. As a rough guide:
- Small countertop griddle, moderate use: around 20,000–25,000 BTU
- Mid-size range for varied cooking: 32,000–97,000 BTU/hr, depending on burner count and how hard the kitchen runs it
- Heavy-duty double ovens for high-volume kitchens: 300,000+ BTU/hr
