Whether you call it a chip scuttle, a chip dump or a chip warmer, the job is the same: keeping freshly fried food hot, crisp and ready to serve between the fryer and the customer.

The differences between models matter more than the name. How a unit heats, how it deals with excess oil and how much space it takes up all affect the quality of what you serve. This guide explains the main choices, so you can match a commercial chip warmer to the way your kitchen works.

How Chip Warmers Keep Food Hot

Chip warmers use one of three heating approaches, and each suits a different way of working.

Heat from below. Base-heated models, such as the Lincat Silverlink CS4 and CS6, warm the tank from underneath. Thanks to a hinged lid that holds in heat and a low profile, they sit neatly beside a fryer on a back-of-house counter.

Heat from above. Some models rely on overhead halogen lighting instead. The ACE EN28, for example, uses a halogen gantry light, while the ACE EN67 has halogen lamps above the tray with six heat settings. Overhead lighting also shows the food off, which helps at a front counter.

Heat from both. Many units combine a heated base with an overhead lamp or gantry. You’ll find this approach on the Lincat CS4/G, the Lincat FriFri Silofrit, the Infernus INF-CW8 and INF-CS, and the Archway CS1/E and CS2/E. On the Archway models, you can also control the base element and the overhead lights separately.

Dealing With Excess Oil

Heat alone won’t keep chips crisp. Oil left sitting in the tank turns them soggy, so drainage deserves just as much attention.

Most designs use a perforated drain plate to let oil fall away from the food. Other approaches include an angled draining plate on the ACE EN67, which also makes scooping easier, a curved drain plate on the Archway models and a removable oil tray on the ACE EN28.

Whatever the design, removable parts make the end-of-day clean far simpler. On the Lincat FriFri Silofrit, the container and drain plate are even dishwasher-safe.

Countertop or Freestanding?

Space usually decides this one.

Countertop chip warmers range from compact units like the Lincat Lynx 400, which holds around 2.5kg of chips, to wider models taking a full 1/1 gastronorm container, such as the Lincat CS4/G. They suit pubs, cafés and restaurants where the fryer already shares a counter.

Freestanding models stand on their own base and often bring extra practical features. The ACE EN68 comes on a choice of feet or wheels. The Infernus INF-CS adds heavy-duty wheels and storage space underneath, while the Archway models include a storage cupboard. Being able to move the unit makes cleaning around it much easier, which matters in a busy fish and chip shop.

Bag Stations and Serving Speed

In a busy takeaway, having bags within reach saves time at the counter. Some models include a chip bag support or bag station, so staff can fill and hand over portions without reaching for bags elsewhere.

In our range, the Infernus INF-CW8 and INF-CS and the Archway CS1/E and CS2/E all offer this feature.

Matching Capacity to Your Fryer

A chip warmer should keep pace with your fryer rather than hold a whole service’s worth of food. Chips taste best soon after frying, and holding times are short. Lincat, for instance, states that the Lynx 400 holds heated products for up to 20 minutes.

With that in mind, think about how many portions you serve during a rush. Then choose a size that keeps a steady flow from fryer to customer, without food sitting around for too long.

If you’re building a line of matching equipment, it’s also worth looking for a warmer from the same series. Lincat’s CS4, CS6 and CS4/G, for example, all belong to its Silverlink 600 range.

All-in-One Options for Compact Kitchens

Where space is very tight, combining equipment can help. The Infernus INF-EFB3 brings together an 8-litre fryer, a chip scuttle with a halogen heat lamp and a twin bain marie in one countertop unit.

It runs from three separate plugs, however, so check you have enough sockets where it will go.

Food Safety and Holding Temperature

Under UK food hygiene rules, hot food on display generally needs to stay at 63°C or above. A chip warmer is designed to keep freshly cooked food hot during service, not to reheat food that has already cooled. The exact rules vary slightly between England, Wales, Northern Ireland and Scotland, so your local authority’s environmental health team can advise on what applies to your business.

Power and Installation

Most chip warmers in our range plug into a standard socket, which makes them easy to add to an existing kitchen. Power requirements still vary between models, though, so check the product details or give us a call before ordering.

Choosing the Right Chip Warmer

To sum up, a few questions will point you in the right direction:

  • Will it sit beside the fryer, out of sight? A low-profile, base-heated countertop model is a practical choice.
  • Will customers see it? An overhead lamp or gantry keeps food warm and on display.
  • Are you running a busy takeaway? A freestanding model with a bag station and storage keeps service moving.
  • Is space tight, or are you cooking in a van? A compact countertop unit or an all-in-one could be the answer.
