The Blue Seal Evolution Series IN54F puts a 900mm induction range on top of a full convection oven — so you get the responsiveness of induction cooking with proper oven capacity underneath, rather than choosing between the two.
Four 5.0kW full-area induction zones cover the ceramic glass top, and the automatic pan detection is one of those details that’s useful day to day — a zone only draws power once there’s actually a pan sitting on it, so there’s less standing heat and less to think about mid-service.
The oven below is a 2/1 GN electric convection oven, 6.1kW, with dual circulation fans for even heat distribution across the cavity, and thermostatic control from 50°C to 320°C.
Build-wise, it’s finished the way the rest of the Evolution range is: fully welded and vitreous enamelled on the oven liner, control panel and drop-down door, with a heavy-duty stainless steel exterior finish. It stands on 63mm stainless steel legs, with adjustable feet at the front and rollers at the rear for repositioning during cleaning.

FAQs
What is induction cooking?
Induction uses electromagnetic energy to heat compatible cookware directly rather than heating the cooking surface first. It provides fast heat-up, precise temperature control and less wasted heat in the kitchen.
How does a convection oven work?
A convection oven uses fans to continuously circulate hot air around the food, helping to reduce hot and cold spots and deliver more even, consistent cooking. The IN54F features dual circulation fans, particularly useful when cooking across multiple rack positions.
Can I install the IN54F myself?
No. With a 26.1 kW, 400–415 V three-phase electrical supply, the IN54F requires professional installation by a suitably qualified commercial electrician.
