Chef drawers are becoming an increasingly useful addition to professional kitchens, particularly where space, speed and organisation around the cookline matter. Here’s what they are, how they compare to other refrigeration, and what to look for when choosing one.

What is a chef drawer?

A chef drawer is a commercial refrigeration unit featuring pull-out refrigerated or freezer drawers rather than conventional hinged doors. It’s built for use right at the cooking area. Many models accommodate standard Gastronorm (GN) containers, helping keep ingredients separated and organised. Depending on the model, they may offer refrigerated storage, frozen storage or Multi Temp (switchable) operation.

Manufacturers also use names like chef base, refrigerated chef base, freezer drawer, cookline refrigeration, or undercounter chef drawer for this equipment. Terminology varies, so check the individual product specification rather than relying on the name alone.

Why use one?

Having frequently used ingredients readily accessible during service can reduce unnecessary movement, keep ingredients organised, and improve workflow at busy stations. This matters most around grills, griddles, fryers, chargrills and ranges, where every extra step slows things down.

Chef drawer vs chef base vs undercounter fridge

People sometimes use the terms chef drawer and chef base interchangeably, but a chef base can specifically mean a heavy-duty refrigerated base built to support cooking equipment directly on top. Never assume this — always check the manufacturer’s specification for the individual model.

A standard undercounter fridge, with hinged doors and shelves, is a versatile option for general storage. Chef drawers instead offer pull-out access, which usually makes GN containers and prepared ingredients easier to organise and retrieve during service. The right choice comes down to how you’ll actually use the refrigeration.

What to look for when choosing

* Overall dimensions, number of drawers, and single vs double configuration
* Gross and net capacity, plus GN container capacity (e.g. 2 x GN1/1)
* Chilled and/or frozen storage, including Multi Temp for flexibility
* Independent temperature control on suitable double-drawer models
* Climate class and power supply
* Ventilation and installation clearances, especially near hot cooking equipment
* Access for cleaning and maintenance
* Stainless steel construction, soft-close drawers, digital controls, castors and auto defrost

If your existing refrigeration is well positioned and covers your kitchen’s needs, changing it may bring little benefit. Chef drawers earn their place where a busy cooking station needs organised, readily accessible ingredients close at hand.
