The Moffat DHT takes a different approach to the traditional hot food counter. Instead of rows of GN pans sitting in a bain marie, food sits on a completely flat heated glass surface. It’s a cleaner, more modern way to present hot food to customers choosing directly from the counter.

So, how does it work?

First things first: the Moffat DHT isn’t an induction hob.

It uses individual Neo-Ceram glass thermo panels, governed by an energy-regulating control. The panels distribute heat evenly across the surface, with no hot spots, distortion or discolouration.

You’re not tied to induction-compatible pans either. Suitable heatproof serving dishes and containers sit directly on the surface, with the exception of cast iron. That gives you far more freedom over how food is presented than a standard bain marie allows.

You’re not limited to rows of stainless-steel GN pans. Instead, you can choose dishes that suit both the food and the style of your counter.

Made for food on display

You can adjust the surface temperature up to a maximum of 100°C. The unit is designed to hold pre-cooked food at serving temperature rather than cook it.

Once everything’s prepared and ready for service, the Hot Top simply keeps it there. That makes it a good fit for hotel breakfasts, buffets and carveries. It also suits staff restaurants, education catering and other front-of-house set-ups where customers serve themselves.

Add heat from above

Choose a model with an overhead gantry, and large electric heat lamps add extra heat from above. They illuminate the food below too. The quartz covers let UV light through, with a halogen bulb inside each one.

There’s a choice of curved or square glass profiles, plus double-sided island versions. That means you can match the style to your counter. For carvery use, an optional heavy-duty spiked stainless-steel carving pad is also available.

And it’s only 13 amp

Despite the built-in look, the DHT comes with a 13 amp plug and cable ready for connection. That makes installation refreshingly straightforward.

Choosing your model

The range runs from the D2HT through to the D5HT, with four different sizes to suit different counter layouts. The D2HT measures 830mm long, while the largest D5HT extends to 1814mm.

Electrical ratings run from 0.58kW on the D2HT up to 1.78kW on the D5HT. That gives you options for everything from a compact breakfast counter to a larger buffet line.

Models without the overhead gantry come with a panel-mounted remote control box instead. A suitably qualified person should carry out installation in accordance with the manufacturer’s instructions, as with all commercial electrical catering equipment.

A different way to display hot food

The traditional bain marie remains a great piece of kit. For many operations, it’s still exactly what’s needed.
