BTU Explained: What It Means & How Much You Actually Need.

If you’ve been comparing commercial gas equipment, you’ve almost certainly come across the term BTU. It appears on the specification sheets for fryers, ranges, griddles, chargrills and ovens—but what does it actually tell you, and how much do you really need?

What Does BTU Actually Mean?

BTU stands for British Thermal Unit – a measure of heat energy. On commercial catering equipment, you’ll usually see it expressed as BTU/hr (BTU per hour), which measures an appliance’s heat output.

In simple terms, the higher the BTU rating, the more heat an appliance can produce. This generally means faster heat-up times and quicker recovery when cooking.

BTU isn’t exclusive to gas appliances – it’s simply a unit of heat energy and is also used in air conditioning and refrigeration. In commercial kitchens, however, gas equipment is almost always rated in BTU/hr, while electric equipment is normally rated in kilowatts (kW).

As a guide, 1kW is equivalent to approximately 3,412 BTU/hr.

Does a Higher BTU Rating Mean a Better Appliance?

Not automatically.

A higher BTU rating simply means the appliance is capable of producing more heat. Whether that’s an advantage depends entirely on your menu, workload and the volume of food you’re producing.

For example, a compact countertop griddle producing around 20,000–30,000 BTU/hr may be ideal for cafés, kiosks and smaller pubs. A busy restaurant serving continuous breakfast or burger service may benefit from a heavy-duty griddle producing 80,000–100,000 BTU/hr to maintain temperature throughout service.

Neither appliance is “better”—they’re simply designed for different workloads.

Why Recovery Matters

Every time cold food is placed onto a hot cooking surface or lowered into a fryer, the appliance loses heat.

The speed at which it returns to its operating temperature is known as recovery.

A higher BTU rating generally allows the appliance to recover more quickly, helping to maintain consistent cooking temperatures during busy service.

This is particularly important for:

– Commercial fryers
– Griddles
– Chargrills
– Busy six-burner ranges

How Much BTU Do I Actually Need?

There isn’t a single “correct” BTU rating. The right appliance depends on the type of food you’re serving, how busy your kitchen is and how quickly you need to recover heat between batches.

Countertop Griddles

Most countertop griddles operate between 20,000 and 30,000 BTU/hr, making them ideal for cafés, pubs, kiosks and businesses with moderate demand.

Heavy-Duty Griddles

Busy restaurants, burger outlets and breakfast services often benefit from griddles producing around 80,000 to 100,000 BTU/hr, helping maintain consistent temperatures during continuous cooking.

Commercial Gas Fryers

Gas fryers vary considerably depending on their oil capacity and intended use. Rather than focusing solely on the BTU rating, consider recovery time and hourly output, particularly if you’re frying continuously during busy service.

Commercial Gas Ranges

Many six-burner commercial ranges produce around 90,000 to 100,000 BTU/hr overall, although individual burner outputs vary between manufacturers.

Heavy-Duty Double Oven Ranges

Large commercial ranges designed for high-volume catering can exceed 300,000 BTU/hr, providing the heat output needed for demanding kitchen environments.

These figures are intended as a general guide. Manufacturers regularly update specifications, so always check the current product data for the exact appliance you’re comparing.

Will My Gas Supply Support It?

Higher BTU appliances require more gas to operate at full output. Whether your equipment runs on Natural Gas or LPG (Propane), it’s important that the gas supply is correctly sized for the total demand of your kitchen.

If you’re installing several high-output appliances or upgrading existing equipment, have your gas supply assessed by a Gas Safe registered commercial engineer. They can confirm that your installation is suitable for the combined load and advise if any changes are required before commissioning your new equipment.

Does a Higher BTU Rating Mean Higher Running Costs?

Not necessarily.

A higher BTU appliance isn’t automatically more expensive to run. An appliance that heats up quickly and recovers rapidly may actually spend less time operating at full power than an undersized appliance struggling to keep up during busy service.

The right BTU rating is about matching the appliance to your workload—not simply choosing the biggest number.

BTU Isn’t the Whole Story

BTU is an excellent way of comparing gas appliances, but it shouldn’t be the only specification you consider.

Burner design affects how evenly heat is distributed across a griddle plate or oven cavity. Recovery characteristics, insulation quality and overall build quality all influence cooking performance.

Two appliances with identical BTU ratings can still perform very differently in a busy commercial kitchen.
