Pancake Day falls on Tuesday 17th February this year. It’s one of those dates that has stayed firmly in the calendar.

Its roots go back centuries. Originally, it offered a practical way to use up eggs, milk and flour before the start of Lent.

It’s simple food. Batter in a hot pan. Quick turn. Stack building steadily to one side.

For many, it’s still lemon and sugar. A squeeze, a sprinkle, fold and done. Hard to argue with.
